The freshly harvested grapes reach the cellar where they are destemmed and crushed. The grapes are left to macerate on the skins for 15 days and the fermentation takes place in stainless steel containers at a controlled temperature of 30/33°C. The wine is then aged for 12 months in oak barrels.

Primitivo di Manduria DOC 2014

The grapes come in part from vineyards in the municipality of Manduria, Sava, San Marzano, Fragagnano and Avetrana (Taranto), and in part from vineyards in Erchie, Oria and Torre S. Susanna (Brindisi). The region of production of Primitivo di Manduria is characterized by a sandy clay loam soil, rich in calcium and magnesium. The average production of the vineyards is 90 quintals per hectare. The vines are grown using the traditional scheme known as Apulian trailing vines, which has been for several centuries in Salento.

Dark ruby color with violet hues. Very intense and sweet aromas. Hints of ripe plum and blackberry with delicate notes of chocolate and vanilla. Also gives light mouthfeel of aromatic herbs and licorice. Very smooth and fat on the palate, rich  in sweet tannins, with a fruity, warm and spicy finish. Remarkably balanced and persistent.

The wine pairs beautifully with roasted and braised meats and game. Ideal also with hard ripe cheese, spicy sausages and hearty soups.

It is advised to open the wine bottle a couple of hours before serving.
